I had a very similar issue with my Dacor oven where it would randomly overheat or take forever to reach the set temperature, and after a couple of frustrating attempts to figure it out myself I called Lafixit https://lafixit.com/dacor-appliance-repair/ they came the same day, the technician checked the sensors and heating elements, explained that the temperature probe was failing and causing inconsistent readings, replaced the faulty part, tested the oven multiple times to make sure it was stable, and after that everything started working normally again without any fluctuations.
